A delicate but still quite full-bodied unpeated Islay whisky, with a vibrant twist, the result of the long slow maturation of a very clean and malty distillate, only slightly enhanced a final finish for four years in second fill Oloroso casks. The influence of the dry sherry is restrained but noticeable: the expected silky, flowery and waxy

character of the distillery is always there, with the usual firm maltiness and honeyed notes. But soon, citrusy notes start to grow: orange peel, candied lemon, bergamot. Creamy maltiness is soon replaced by a drier, livelier attitude, with a playful spiciness and even delicately leathery, farmy and organic notes, evolving into a peppery finale with hints of liquorice root.

A rare release from an ultra-smoky batch of Bunnahabhain, an Islay distillery which is famous for its usually unpeated single malt. What makes this bottling so fun is that when they make a peaty spirit, they don’t go for half measures: it’s immediately obvious from the first whiff that this is a feast of all the typical Islay flavours. Extremely smoky, ashy, full of maritime notes and a marked medicinal touch, it’s a very clean and malty spirit as expected from Bunnahabhain… but at the same time it packs a wallop in terms of pure “peat power”. It’s also interestingly vegetal and herbal, with rich notes of black liquorice, gentian root. The aftertaste is particularly warm, peppery and lingering, with the smokiness reverberating for minutes after each sip.

One of the biggest, richest, sweetest releases of our beloved Sherry Cask Malt in years: this edition is based on a secret recipe of single malts from several distilleries, all married and aged in fresh Oloroso sherry casks. The interplay between the different distillery styles allows it to reach unprecedented complexity, with a flavour profile that encapsulates subtle hints of earthiness, leather, liquorice and beeswax on a solid backbone of raisins, dried apricots, candied orange rinds, butter biscuits, marzipan and almonds. It’s a honeyed and fruity malt whisky, with the juicy and rich note so typical of maturation in sherry casks but without a hint of winey sharpness. What is even more surprising, with a whisky of such complexity and richness, is how it remains so hugely drinkable, easy and light-spirited: a testament to the elegance of the art of blending.

The Isle of Mull's only distillery, once known for wild and unpredictable malts, has now reached a level of perfection in peaty whiskey production that rivals those of Islay. It is a very clean smoky whiskey, with the typical dry, maritime, salty and fresh notes of the best malts of the West Coast islands. Almost sour and citrus on the nose, it shows the strength of maturation in second-fill bourbon barrels to let the spirit speak. Slightly more delicate than usual, it still packs a whiff in terms of ashy smoke. In the long run, and with the addition of a drop of water, the typically floral and vegetal notes for which the distillery is famous shine. Power and finesse at the same time.

From the western coast of Scotland, at the feet of the highest mountain in the Highlands, this distillery has always made a medium bodied single malt of distinction, renowned for its fragrance of orange rinds and its creamy mouthfeel. We let it rest for a little more than one year in a first fill Oloroso cask to enhance its fruity character, and now it’s ready. At the nose, it’s particularly winey, with the typical dry and earthy notes that are expected from this kind of sherry. On the palate, it starts mellow and fragrant, with oranges, red berries and a firm malty character before showing a particularly nutty touch. The winey character is evident, raisiny but dry, with a rather astringent balance. Rich, fruity and ripe, but also lean and appetizing.

When using fresh barrels of Pedro Ximenez, the rule not to overwhelm a gentle and flowery Speyside malt is to use a light hand: seven months of aging in the sweet Spanish dessert wine was enough to give it a fruity scent without overpowering the dry character and crunchy of the spirit. The result is incredibly balanced and true to the style of the distillery. With a light but firm body, it evokes a wide range of fruity notes: blood oranges and orange peel, a touch of red apples, red berries and only the smallest piece of sultanas and hazelnuts. Despite the finish, this is not a sweet and cloying malt: on the contrary, it remains agile, light-footed and perfectly suited as an aperitif or to be paired with some medium-aged cheeses.

An exciting new version resulting from the long experience with aging. This bottling is a vat of five barrels with one punch filling bourbon finish and two in virgin American oak. The result is the perfect balance between the salty, dry and mineral taste of Caol Ila's classic whiskey and the contribution of virgin oak, which adds a creamy, buttery, robust backbone of sweetness: it is rich, fuller and bolder than usual. , with notes of vanilla and soft tannins that are expected from this type of barrels. The secret lies in balance, because the lighter bourbon barrels still provide a classic and lively counterpart with their intensely smoky and sharp sea notes. This is still Islay ... but with a sweeter new twist.

A departure in style from our usual single malts from Bunnahabhain. Not a hint of the usual softness: this is an unexpectedly muscular and incisive whiskey, a real bad guy! If the nose may seem polite enough, with the usual beeswax, honey, chamomile and a hint of organic character, the dramatic turn comes with the first sip: a peasant monster, with wild notes of leather and damp earth. You can still discern a flowery character, with the expected waxiness, flour and even a hint of licorice. But there also seems to be more than a touch of peat, and the whole thing is simply huge and fat, chewy and powerful. Then it becomes drier, and although only moderately vinous, it hides another final surprise with an explosive pepper explosion.

A textbook young Caol Ila, fully showcasing the distillery style and the influence of the first fill bourbon casks. At the nose, it offers only a hint of the peaty intensity it has in store: very medicinal, very phenolic, but almost friendly. There are even some farmy notes, a slight touch of butter and vanilla, for a soft first approach. But Islay malts like to take you off-guard… At the first sip, a huge maritime blast of iodine and peat, ashy and tarry, envelops your senses. After the initial shock, you start to get the delicious nuances: a fruity freshness of bananas and ripe white wine. Again, it’s almost buttery, before turning clean, mineral and very lemony, with the peat burning hot and thick for several minutes.
