WATERFORD DISTILLERY

Organic spirit isn't just something Waterford is playing with. The first year of cultivation (2015) they recruited six farmers to produce organic malted barley grown in Ireland. Even though the yield is lower than that of regular malted barley, Waterford still manages to lay 400 to 600 barrels of organic brandy per year.

The Waterford Distillery is exploring Irish terroir and how it relates to barley and whisky with its Single Farm Origin series - a noble and worthwhile pursuit! This is one of the first releases from the series, made exclusively using Taberna barley grown by David Walsh-Kemmis on his Ballykilcavan farm in Co. Laois. After distillation, the whisky is matured in a combination of French and American oak, and then bottled at 50% ABV with no chill-filtration or additional colouring.

One of the first releases of the Single Farm Origin series of Waterford Distillery - here, Bannow Island 1.1! This single malt Irish whiskey  was distilled using a single vintage of Overture barley grown on the south coast of County Wexford by Ed Harpur on his Bannow Island farm  Surrounded by the sea and grown on sandy soil, it is an excellent exploration of the barley terroir in relation to whiskey. The spirit was aged in a combination of French and American oak barrels and bottled at 50% ABV without cold filtration or additional coloring.
