The Vermouth Chinato del Professore takes up this ancient tradition and combines the sweet infusion of Vermouth with China Calisaya, which transforms the Vermouth into a digestive or a tasty after-meal.

The base wine used is Barbera to which a blend of orange, vanilla, cinchona calisaya and coriander is added. A fresh pleasantness with a bitter finish.

Recommended to be drunk alone as an aperitif or mixed in cocktails, also to be tried at the end of a meal.

A sweet Italian vermouth named after Jerry Thomas, the legendary 19th century bartender who is considered by many as the father of American mixology and known to some as 'The Professor' (hence this vermouth's name). Vermouth del Professore is a collaborative effort between Frederico Ricatto, Carlos Quaglia and the Jerry Thomas Speakeasy in Rome, and has been produced using Muscat wine, an infusion of 13 spices in neutral spirit and cane sugar.

Vermouth del Professore White

ANTICA DISTILLERIA QUAGLIA

The joint venture between Carlo Quaglia, distiller since 1890 in Castelnuovo Don Bosco, Federico Ricatto and the Speakeasy of Rome with his Jerry Thomas Project produced a Vermouth that lengthens the moments of mixed thinking until the end of the 1700s.

To say that the recipe is simple is to make fun, the names of the ingredients are simple, but the intellectual "potion" of conceiving wine, alcohol and naturalness in herbs and spices is very, very complicated.

The wine is a Langhe white Muscat, to which pure alcohol of refined distillation has been added (it will reach up to 18 °), then about fifteen aromatic and officinal herbs collected on the alpine slopes that surround Turin and spices. The added sugar is pure and recently refined cane sugar.

Vermouth del Professore This product is called really far from the stereotypes of flavored wines, always called Vermouth, which create excellent cocktails such as Negroni or Americano.


Vermouth del Professore was created with a well-defined purpose, that of regaining possession of the role that must compete with it, that of an aperitif.

ANTICA DISTILLERIA QUAGLIA

It is an easy idea to understand. The union of fine Piedmontese wines, aromatic herbs, exotic spices and crystalline sugar generates a classic red vermouth.

The slow maturation in steel tanks gives the product a surprising garnet color with amber reflections that elegantly accompanies the classic vinous olfactory imprint elegantly supported by hints of vanilla and citrus. At the moment of tasting it releases all its elegance opening up in a light alcoholic embrace that is the prelude to a long and satisfying persistence rich in subtle spicy and bitter returns.

We recommend serving at room temperature in large goblets accompanied by dark chocolate pralines and hazelnut grits, or in a tumbler with ice and orange peel.
